One of the highlights of my spring social calendar is The Hearty Party, a fun and family-friendly fundraiser that benefits Camp Bon Coeur. Along with helping a great cause and supporting a local organization, the party is a ton of fun!
As one of the yearly sponsors, I have the honor of preparing and serving food to about 500 patrons. This year, my “Cajun Mama” table was in between Walk-Ons and La Pizzeria. My “neighbors” were amazing and we had fun dancing and chatting while serving our delicious food.
One of my favorite parts of the evening, besides hearing the beautiful testimonials from the child attendees of Camp Bon Coeur, is sampling all of the food! In fact, The Hearty Party is where I took my first bite of the divine deliciousness that is the Rusted Rooster’s chicken biscuit with pepper jelly. After that bite, I was forever a changed woman.
This year, I decided to make meatball lollipops, inspired by my son whose newest obsession is my pepperjack meatballs. They are perfect for feeding a crowd and very handy in a social setting because they require no utensils! They can be prepared Italian-style with marinara, or Southern-style with a spicy BBQ sauce. I prepared these the southern way, and received a ton of messages after the party asking for the recipe! So, here it is! Enjoy!
1lb ground sirloin
1lb ground pork
1 cup Cajun Trinity
1/2 cup milk
1/2 cup breadcrumbs
1 tbsp your favorite hot sauce
Your favorite BBQ Sauce
Combine milk and breadcrumbs in a small bowl, then refrigerate.
On medium heat, stir Cajun Trinity with butter until onions are translucent.
Combine cooked Trinity with ground sirloin, ground pork, eggs, Cajun seasoning, and hot sauce.
Stir in breadcrumb/milk mixture. Form small round balls with mixture and refrigerate for 1 hour.
Preheat oven to 375 degrees, then bake meatballs for 25-30 minutes. Pour your favorite BBQ sauce generously on top of meatballs. Bake for an additional 10 minutes.
Add lollipops sticks and serve while warm. Enjoy!
